I have no idea where this recipe came from. It’s pretty much everywhere and it might be the most simple cookie recipe there is. On my weekly trip to Aldi, I noticed they were getting a lot of seasonal items in stock. This makes me HAPPY! I love cooking in the Fall. It marks the start of entertaining and holiday gatherings, and being neighborly, warm and nostalgic. So I just pretty much love this time of year!
I spotted a can of pumpkin and decided to grab a box of spice cake mix across the road at the Publix to make these super simple cookies.
That’s right… that’s all you need!
I can’t be an expert on this topic, but I also have seen this recipe on the Weight Watchers forums, so it must be a more healthy version of cookies!
All you do is combine the cake mix (dry) and the canned pumpkin (15 oz) in a bowl.
And mix that together until its smooth and well incorporated.
Drop them by teaspoons onto an ungreased cookie sheet.
And pop them in the oven at 350F for 18-20 minutes. You basically are just drying them out.
They don’t spread out, and they stay nice and bouncy on the inside.
I even had these at my Pittsburgh wedding cookie table, which is a tradition back there, because they were a super simple way to fill it up! (They froze well for me too).
